SARAH’S SPECIAL JERK CHICKEN!

DEAR DIARY,

RIGHT. i don’t know how to cook. Well that is what i thought, until inspiration struck and i just got the HUGEST urge for Jerk, plus my family was having a dinner party and they needed an extra dish. So POW, after i sent a panicked cry for help on bbm broadcast message, i got some great advice and just went for it. It turned out to be utterly delish, and even more so, because i honestly didn’t think i had it in me!

My Easy Recipe

Chicken thighs, or breasts.

For the sauce:

LOADS of onions, quartered
1- scotch bonnet or other REAL hot n spicy chillies chopped up and seeded
50g/2oz root ginger, chopped roughly, dont bother peeling.
1 tsp ground allspice
Small bunch fresh thyme, leaves only
1 tsp or a little more of freshly ground black pepper
A few pinches of nutmeg
2 tablespoons of dark molasses
coconut juice ( fresh from the coconut- about 3 table spoons)
Pineapple Juice ( 2 table spoons)
Salt ( 2 tablespoons or more according to taste)
1 and half tea spoons of corriander
A tiny bit of chopped coconut.
1 and half teaspoons of turmeric paste

COOKING.

Cook for hour to hour and half depending on preference. Cook on 180 and turn chicken half way through, if you want skin extra crispy, stick under grill for 15 mins.

To serve:
boiled rice and peas. SIMPLES. ( I like brown rice and i like to add a TINY bit of pineapple juice to make it extra yummy)
1 pineapple, pealed, cored and cut in wedges
4 limes, 3 cut in wedges, 1 juice only
Fried Plantain or green banana
